Laab, or larb, is a favorite salad from the north of Thailand, made with finely minced chicken tossed in a citrusy-sweet dressing of lime, lemon, and fish sauce, spiked with fresh cilantro, mint, lemongrass, and shallots, and served wrapped in lettuce leaves with toasted rice powder for some roasty crunch. Served with steamed jasmine rice and cucumbers on the side, it’s hard to imagine an easier or more refreshing meal.
