Samosas - those delicious pyramidal parcels of crisp, flaky dough encasing a delicately spiced filling of potatoes and peas - are a quintessential Indian treat, but can be messy and time-consuming to make. In this version, we take a cue from Central America and encase samosa filling in fresh flour tortillas along with tangy Tamarind + Date chutney and melty Oaxacan cheese and fry it up quesadilla style.
