In this quick and simple Venetian spring favorite, sweet peas and arborio rice are simmered with parmesan cheese into a slightly soupy but entirely satisfying risotto. Wonderful as is for a light supper, or add some diced bacon or pancetta for a richer, more traditional meal.

In this vegan iteration of the Vietnamese street-food favorite, organic tofu is marinated with hoisin a sweet hoisin + 5-spice glaze and grilled, then stuffed into crisp toasted hoagie rolls with quick-pickled carrots and radishes, fresh herbs, and creamy vegan sambal mayo.
