Spring is in the air!
We at Acme Farms + Kitchen can barely contain our excitement for the vibrant bounty that spring brings to the Pacific Northwest. This season is all about fresh starts, and what better way to embrace it than by diving into the delicious local produce that’s bursting with flavor and nutrition? Let’s take a look at some of the specialty spring produce coming from our farmers, and our favorite meals to enjoy them in.
Asparagus coming from Andersen Organics
One of the first signs of spring, Washington asparagus is tender and flavorful. Packed with vitamins A, C, and K, asparagus is not just delicious; it’s also great for your skin, immune system, and bone health. Plus, it’s super versatile—grill it, steam it, or toss it in a salad for a fresh crunch!
One of our favorite meals we look forward to all year is our Flatbreads with Asparagus + Lemon Ricotta. Creamy lemon-infused ricotta cheese from Samish Bay Cheese makes a delicious base for these fresh- baked flatbreads, topped with Andersen Organics asparagus and red onion and served with lightly dressed arugula.
Strawberries, coming late Spring from Nottinghamshire Farms and Liepold Farms
Oh, sweet strawberries! Pacific Northwest strawberries are juicy, bright red, and bursting with flavor. These little gems are a fantastic source of vitamin C and antioxidants, which can help boost your immune system and keep your skin glowing. We love them fresh, in smoothies, salads, desserts or as a topping for yogurt!
One of our favorite strawberry salads is our Strawberry + Fresh Mozzarella Salad with Honey Vinaigrette. Sweet, juicy strawberries from Nottinghamshire Farms and Liepold Farms and creamy avocados play perfectly with the small handmade fresh mozzarella known as ciligine from Samish Bay Cheese, marinated with a thyme-spiked honey vinaigrette and tossed with toasted pepitas and tender spring greens from Farm Wild Farms.
Radishes coming from Spring Time Farms
These crunchy veggies pack a peppery punch and are a spring staple. Radishes are low in calories and high in vitamin C, making them a fantastic addition to salads or as a colorful garnish on any dish. Their crisp texture adds a delightful crunch and a burst of color to your plate!
Although these Kalua Pork Lettuce Wraps take a minute to make, but totally worth it, (it’s a weekend family meal for sure!) we just love all the fresh flavors, especially the peppery crunch of the radishes! These lettuce wraps take on the Hawaiian classic, pasture-raised pork shoulder from Pure Country Farms is slow cooked, shredded and served in lettuce cups alongside a tangy slaw of cabbage, crisp radishes from Spring Time Farms, and sweet pineapple. A refreshingly, flavorful spring bite!
Spring Peas coming from Wild Mountain Farms
Sweet and tender, spring peas are a delightful treat that signals the arrival of warmer weather. Rich in vitamins A, C, and K, as well as fiber, these little green gems are perfect in stir-fries, pastas, or simply steamed with a pinch of salt.
We love a quick meal! And our Cheese Ravioli with Snap Peas + Lemon Butter Sauce is the perfect quick meal in the spring! Tender ravioli filled with a creamy blend of four cheeses from La Pasta are tossed in a light lemon butter sauce with gently sauteed sweet snap peas from Wild Mountain Farms, wilted arugula, and dots of creamy ricotta.

As the weather warms, a larger variety of salad greens come into season. These greens are packed with vitamins A and K, and they come with a host of health benefits, including promoting good digestion and reducing inflammation. They’re perfect for fresh salads or sandwiches!
We love our SALMON SALAD WITH CREAMY CILANTRO DRESSING loaded with deliciously fresh salad greens. Further proof that you can’t go wrong putting a piece of salmon on a tasty salad, this light and refreshing Mexican-tinged bowl combines fresh baby greens from Farm Wild, creamy avocado, crisp bell pepper, hearty pinto beans, and crunchy pepitas, all tossed with a creamy cilantro + lime dressing and topped with lightly-spiced grilled wild Pacific salmon from Icy Straight.
Chives coming from The Growing Gardens
As we welcome the vibrant flavors of spring, let’s not forget the delightful contributions of chives. Chives, with their delicate onion-like flavor, are a fantastic addition to salads, soups, and spreads. Rich in vitamins A and C, they not only elevate dishes with their fresh taste but also bring health benefits, including supporting digestion and boosting the immune system.
We love the depth of flavor chives bring to our Pasta with Asparagus and Goat Cheese. With fresh artisan gemelli pasta from Bellingham Pasta Co tossed with lightly sauteed, crisp asparagus, fresh chives from The Growing Garden and bound together with a creamy, lemony goat cheese sauce, this quick pasta is a celebration of spring flavors for sure!
6. Rhubarb coming from Living Rain Farm
Rhubarb stands out with its striking sweet tartness, making it a beloved ingredient in desserts and preserves. Packed with antioxidants and fiber, this vibrant stalk is perfect for creating pies, compotes, or even tangy sauces.
Our favorite rhubarb dessert has to be our Rhubarb Shortcakes with tender, sugar-crusted cream shortcake biscuits layered with organic whipped cream and a sweet compote of spring rhubarb from Living Rain Farm.
