In this Southwest take on the quick and convenient mason jar salad, hearty black beans are marinated in a tangy chipotle + lime vinaigrette, then layered with nutty steamed quinoa, sweet bell pepper, crisp red cabbage and romaine lettuce, shredded carrots, aromatic cilantro, and creamy avocado, all topped with crunchy pepitas.
