In this New Mexican staple - similar to the classic Texan chile con carne - chunks of pork are slowly braised to melting tenderness in a rich, smoky-sweet chile sauce, and served with refried beans, corn tortillas, and cilantro + lime cabbage on the side. Make sure you save some, because leftovers make the best burrito you’ve ever had!
