In this hearty, protein-rich plant-based burrito bowl, organic tofu is crumbled and sauteed with chorizo spices, served piled on Mexican-style quinoa along with sliced avocado, shredded cabbage, and earthy black beans, topped with a drizzle of creamy, tofu-based chipotle + lime sauce.

CRISPY STIR-FRIED TERIYAKI TOFU AND VEGETABLE BOWLS
30 Minute Meal,

There’s no doubt that sweet, salty, and umami teriyaki is one of the world’s great foods, from high-brow yakitori to strip-mall takeout and everything in between. In this streamlined, vegan “magic” take, extra-firm tofu is crumbled and stir-fried until crisp, tossed with fresh carrots, broccolini, green beans, and scallions, then finished with our gingery teriyaki sauce and served over steamed rice with toasted sesame seeds.
