In this refreshing Japanese-inspired noodle salad, chilled buckwheat soba is tossed with sautéed shiitake mushrooms and asparagus, crisp cucumbers, scallions, and gingery miso + sesame dressing, and topped with sliced avocado and sesame seeds.
