In Argentina, grilling beef is pretty much a national pastime. Usually, it's fairly simple - find the best meat you can, cook it over fire, and serve it doused with a vibrant sauce made from fresh herbs, extra virgin olive oil, and a bit of tangy wine vinegar. Bring the asado home with grass-fed sirloin steak, grilled and served with a fresh chimichurri sauce and crispy smashed potatoes.
