Since the beginning, one of our most central missions here at Acme has been to provide our customers with food that they can trust - food that is produced in an environmentally responsible and regenerative manner, that is clean and free of harmful chemicals and additives, and that is traceable and directly supports small-scale producers and the local food economy in our region. Nowhere is this mission more important than in the meat that we source and and provide with our meals.
It’s no surprise that there are some major problems with meat production in the US. The factory farms and industrial feedlots that dot the country raise serious environmental and ethical concerns. Using cheap, pesticide-laden feed, relying on antibiotics to prevent disease, and raising animals in pretty abhorrent conditions, the conventional meat industry is problematic to say the least.
We’re very proud that we can provide an easy alternative. We see responsibly-raised meat as an important part of a healthy diet and of a healthy food system, and we’re happy to work with farmers and ranchers whose practices align with our values. One such business is Pure Country, from whom we source most of our beef and pork.
Pure Country is the face of Klingeman Family Farms, a multi-generation family farm in the Ephrata area of eastern Washington that is committed to producing sustainable and natural free-range beef and pork, raised humanely and free of antibiotics, hormones, GMOs, and animal by-products. Founded by Paul Klingeman, who has been farming pigs since childhood, Pure Country has become a leader in ethical and sustainable meat production in the Northwest and beyond.
From the beginning, Pure Country has taken a firm stance against GMO feed, and were one of the first meat producers in the country to become non-GMO certified. Their pigs are raised in large open hoop structures with access to outdoor pasture, and their cattle are raised over hundreds of acres of rangeland in the Columbia River Basin. They grow and mill their own certified non-GMO feeds, and process all of their meat in their own state-of-the-art cutting and packing facility.
While you can find their delicious beef and pork products in many of our meals, we think their pork really shines in our Pozole. This rich Mexican stew, with tender and succulent chunks of pork country-style ribs simmered in a deeply-flavored mild chile broth along with toothsome hominy kernels, is warming to the core, a perfect way to take of the chill of a brisk fall day.
