Marry Me Chicken with Fettuccine + Basil
Serves 4
30 Minute Meal
Contains: Wheat, Milk, EggsIngredients
2 chicken breasts, cut lengthwise into 4 equal cutlets
Salt + pepper, to taste
About ¼ cup AP flour
2 tbsp olive oil
4 tbsp butter
5 cloves garlic, minced
Red pepper flakes, to taste (optional)
1 tbsp tomato paste
¼ cup dry white wine (optional)
1 cup chicken broth
½ tsp dried oregano
½ cup dry-packed sliced sun-dried tomatoes
1 pkg fresh fettuccine
¾ cup cream
2 oz parmesan cheese, grated, divided
1 oz fresh basil, leaves picked and torn if large
Instructions
Bring a large pot of salted water to a boil.
Season the chicken cutlets generously with salt and pepper. Place the flour on a plate and dredge the chicken, shaking off any excess.
Heat a large, deep skillet over medium-high heat. Add the olive oil and butter. Once the butter has melted and the foam subsides, add the chicken cutlets and sear until golden on both sides, about 4–5 minutes total. Transfer chicken to a plate and reduce heat to medium-low.
Add the garlic and optional red pepper flakes to the pan. Sauté until fragrant, about 1 minute. Stir in the tomato paste and cook until it darkens and begins to stick to the pan, about 1½ minutes.
Increase heat to medium. If using wine, add it now to deglaze the pan, scraping up any browned bits. Cook until nearly evaporated. Stir in the chicken broth, oregano, and sun-dried tomatoes. Simmer and reduce by half, about 5 minutes.
While the sauce reduces, cook the fettuccine according to package directions.
Stir the cream into the sauce and simmer for another 2 minutes. Add ¾ of the parmesan, stirring until melted. Season to taste with salt and pepper. Return the chicken to the pan and simmer 2–3 minutes to warm through.
Drain the pasta, reserving about ⅓ cup of the cooking water.
Add pasta to the skillet and toss with the sauce, adding pasta water a few tablespoons at a time if needed to loosen.
Plate the chicken and pasta, finishing with remaining parmesan and fresh basil. Serve immediately.
