In this vibrant and protein-rich bowl, we’ve taken all the deliciously warm and savory flavors of your favorite food-cart falafel sandwich and given it a fresh and healthy PNW spin - a base of peppery baby arugula and hearty quinoa, topped with crisp sweet pepper and quick-pickled red onion, crunchy baked chickpeas, and wild Pacific salmon filets dusted with our own falafel spice blend, all drizzled with a garlicky dill tahini sauce.
