One of the most popular dishes from the mountainous Kashmir region of the Indian subcontinent literally meaning “stewed in ghee or oil”, this robust and creamy curry is given its ruby red color and subtle heat from Kashmiri chile, and its heady aroma from a complex blend of spices. While the dish is often made with lamb, our simple version uses cubes of fall-apart tender beef, and is served over another of Kashmir’s staple culinary products - aromatic steamed basmati rice, with some simply-sauteed Indian-style cabbage on the side.
