Laab, a favorite salad from the north of Thailand, is usually made with finely-minced chicken or pork tossed with a citrusy dressing and loads of fresh herbs, then scooped into lettuce cups and served dusted with toasted rice powder. This vegan version retains all of the sweet, tangy, and deep flavors of the original, but swaps out the meat for savory baked tofu.
