Yakisoba is one of Japan’s great contributions to fast-food street cuisine, with springy ramen-style noodles quickly stir-fried in a rich soy-based sauce with vegetables and often some kind of protein. Ours marries thin strips of grass-fed beef with shiitake mushrooms, cabbage, onion, and carrot.
