Of all the natural delicacies the Pacific Northwest has to offer, one of the most delicious is the wild chanterelle mushroom. Peeking up from the forest duff as the summer transitions into fall, this golden, trumpet-shaped fungus boasts a unique savory flavor, and integrates perfectly into all kinds of seasonal dishes - try them sauteed with corn and soft scrambled eggs, sear them up with carne asada tacos, bake them into a chicken pot pie, or - our favorite - toss them with fresh fettuccine in a rich cream sauce.
