In this Southwest take on the quick and convenient mason jar salad, hearty black beans are marinated in a tangy chipotle + lime vinaigrette, then layered with nutty steamed quinoa, sweet bell pepper, crisp red cabbage and romaine lettuce, shredded carrots, aromatic cilantro, and creamy avocado, all topped with crunchy pepitas. For an extra hit of protein, finish the salad with some cubed cheddar or crumbled cotija cheese.
