While traditional tortilla soup is usually centered around chicken, this vegan version gets its heartiness from a combination of black beans and split red lentils, the latter of which break down into the rich tomato + chile broth, lending both body and protein. Topped with cilantro, scallions, crispy tortilla chips, and a squeeze of lime, it’s the perfect plant-based soup for a chilly evening.
