In Rome, fettuccine Alfredo is made with only three ingredients - fettuccine, butter, and parmigiano cheese - without a drop of heavy cream to be found. We make ours the same simple way using fresh egg fettuccine and Roundbale cheese, a locally-produced parmigiano-style aged variety from our friends at Ferndale Farmstead, and serve it with a light arugula salad simply dressed in lemon and olive oil to balance the richness of the pasta.

POTATO VINDALOO CURRY

Vindaloo, a style of curry from the Indian state of Goa, is characterized by its complex warm spice blends and judicious use of tangy tomatoes and vinegar and often contains seafood or pork. This vegan version features both sweet and yellow potatoes, simmered in a coconut milk-enriched sauce and served over steamed brown basmati rice.

The humble cabbage does double duty in this high-protein meatless meal, with tangy lime-marinated red cabbage and wedges of caramelized savoy cabbage, nutty soba noodles, and pan-seared tofu sitting in pools of savory peanut sauce, topped with fresh cilantro and toasted sesame seeds.
