Given the prominence of the basil variety, it’s easy to forget that there are many versions of pesto sauce across Italy. In this punchy, sweet + savory version hailing from Calabria, the region occupying the “toe” of the Italian boot, roasted red peppers form the base of the sauce, balanced by creamy ricotta, complex parmesan, rich almonds, and a hint of spicy Calabrian chile paste. We toss this sauce with fresh fusilli and top with ribbons of fragrant basil for a bright and quick pasta dinner.

Sometimes we want a super-quick meal but don’t want to sacrifice on quality and tastiness, and often the answer to that problem is a good grilled cheese. For this elevated iteration, we’re slathering fresh sliced sandwich bread, or try our new favorite bread (Water Tank Bakery’s Roasted Onion), with sweet fig jam and bracing Dijon mustard, then layering on Ferndale Farmstead’s creamy fontina and sharp reserve cheeses, then broiling everything to melty goodness and finishing with handfuls of lightly-dressed baby arugula.

Ingredients in the meal kits are as local as the season will allow-and I always shop their "Marketplace" for a great variety of add-ons from local bakeries, farms, and dairies.
