Sweet and salty, light and refreshing, these lean boneless pork chops get a quick bath in a lemongrass-infused Vietnamese marinade, then are quickly grilled and served over chilled rice vermicelli noodles with quick-pickled carrots + daikon, sliced cucumbers, fresh herbs, and tangy nuoc cham dipping sauce.
