Humble chile verde is one of Mexico’s most simple and most delicious preparations, with roasted tomatillos and mixed mild green chiles pureed into a complex, tangy, deeply flavorful sauce. In these simple street tacos, pasture-raised chicken legs are slowly braised in chile verde sauce, then shredded and stuffed into fresh tortillas with radishes, cilantro, onion, and a squeeze of lime.
