GREEK MARINATED CHICKPEA JAR SALAD

Makes 3-4 Jar Salads, 
20 Minute Meal + Cooling Time, 
Vegan, Gluten Free, 

In this Greek take on the quick and convenient mason jar salad, hearty chickpeas are marinated in a tangy herbed red wine vinaigrette, then layered with nutty steamed quinoa, sweet bell pepper, spicy baby arugula, red onion, cucumber, cherry tomatoes, and briny kalamata olives, and all topped with crunchy pepitas. For an extra hit of protein, finish the salad with some crumbled feta or chevre.

IN THE BOX:: Chickpeas, Quinoa, Greek Salad Dressing, Orange Bell Pepper, Red Onion, Cherry Tomatoes, Cucumber, Kalamata Olives, Pepitas
OPTIONAL:: Vegetable or Chicken Broth, Feta or Cherve

Assemble the salad ahead of time in jars for an easy grab and go meal (32oz jars recommended for this meal)!

Have tried various meal services like this (Hello Fresh, Home Chef) but Acme Farms hits the bar for me. The quality of food is amazing and fresh. Supporting local PNW farmers and businesses is important to me and these guys are all local. Delivery is environmentally conscious (boxes are sent back each time; no insulation waste). You can order what you want when you want and don’t have to subscribe. Everything I’ve gotten so far has been delicious. Don’t miss out on the pot pies!! And shout out to Megan/Meghan who has delivered my boxes to me and has gone the extra mile to make sure I got my deliveries in my complicated apartment building in Portland (she’s a gem)

I am kind of obsessed with your jar salads, though I would prefer if you offered the Greek one every week because I am not as variety inclined as most of your clients I'm sure. Thank you so much for everything. This is the first year ever, I've made it this long packing my lunch to work and it's because of your jar salads.
