In this Greek take on the quick and convenient mason jar salad, hearty chickpeas are marinated in a tangy herbed red wine vinaigrette, then layered with nutty steamed quinoa, sweet bell pepper, spicy baby arugula, red onion, cucumber, cherry tomatoes, and briny kalamata olives, and all topped with crunchy pepitas. For an extra hit of protein, finish the salad with some crumbled feta or chevre.
