In these quick and easy tostadas, all of the smoky, spicy, sweet, creamy, and tangy flavors of the Mexican street food favorite known as elotes - grilled corn on the cob slathered in a lime and chile infused mayo and topped with crumbled cotija cheese and fresh cilantro - gets removed from the cob and piled on crisp corn tortillas along with refried beans, sliced radishes, jalapeno, and scallions.
