The quick and flavorful soup known in Korean as kimchi jjigae has many variations, often including thin slices of pork belly, but is perfectly delicious and restorative without meat. In this vegetarian version, cabbage, oyster and shiitake mushrooms, scallions, and locally-fermented kimchi are simmered in a savory and mildly spicy broth along with protein-rich tofu and finished with a poached organic egg.
