Rather than the traditional Mexican tomato-based sauce found on most enchiladas rojos, these farmstead cheese-stuffed parcels are smothered with a bright and subtly smoky gravy made from ancho and guajillo chiles. To offset the richness of the cheese, these enchiladas are served with a light green salad.
