Sometimes we want to take some shortcuts in the kitchen, and that’s OK! Rather than rolling individual enchiladas, this Tex-Mex potluck staple takes the casserole route, layering seasoned ground beef, black beans, cheddar cheese, and rich red enchilada sauce with freshly-made flour tortillas in a dish and baking it to a bubbling golden brown.
