Hailing from the northern island of Hokkaido in Japan, a region known for its excellent seafood, chan chan yaki is a simple stovetop meal in which filets of wild Pacific salmon are smothered in a flavorful miso + butter mixture and steamed over sauteed vegetables - the fish cooks to perfect tenderness, and the miso butter melds with the juices from the salmon and vegetables into a deliciously rich, savory + sweet sauce.
