Anthony Bourdain once called sisig - a Filipino dish of crisp fried bits of pork cooked with aromatics and finished with a savory, creamy, sweet, and citrusy sauce - his favorite meal in the world, and it’s not hard to imagine why. Often using more obscure ingredients such as pig face and liver pate and taking hours to prepare, our version is streamlined to use rich ground pork and is on the table in 30 minutes, served over steamed jasmine rice with a simple Filipino cucumber + tomato salad on the side.
