Italian salsa verde, not to be confused with its tomatillo + green chile cousin from Mexico, is a piquant and assertive herb sauce packed with flavorful parsley, capers, garlic, lemon, and olive oil. Amazing with any grilled or roasted meat or seafood, here we use it both as a sauce for grilled sirloin steak and as a dressing for an herbaceous panzanella salad with cubes of rustic wheat bread, cucumbers, cherry tomatoes, and baby arugula.
