Subtly sweet and deeply savory, niku miso is a simple, all-purpose Japanese sauce of ground meat, seasoned with complex miso paste, tamari, ginger, and garlic, and sweetened with a healthy dose of mirin. While it has a number of uses in the kitchen, we love it smothering slippery, chewy udon noodles, finished with grassy scallions, crisp cucumbers, and mildly spicy shichimi togarashi. For a bit of extra richness, we love topping everything with a runny poached egg.
