Developed in Geneva’s Cafe de Paris in the 1930s, it relies on many of the culinary heavy hitters of the era - dijon mustard, capers, anchovy, worcestershire sauce, and fragrant curry powder - along with fresh herbs, lemon, garlic, and shallot to create an unbelievably rich and flavorful topping for a pan-seared sirloin steak, served bistro style with air fryer French fries and a light green salad.
