Originating in the Yucatan region of Mexico, salpicons are a family of dishes in which fish, seafood, or meat is quickly grilled, then chopped and tossed with what is essentially a bright, citrusy, lightly spicy pico de gallo. Our take starts with simply marinated Pacific cod, quickly grilled or broiled, then flaked and tossed with a pico of cherry tomato, cucumber, scallion, chile, and lime, served tostada style on crisp corn tortillas with rich guacamole and crisp sliced radishes.
