Italian salsa verde, not to be confused with its tomatillo + green chile cousin from Mexico, is a piquant and assertive herb sauce packed with flavorful parsley, capers, garlic, lemon, and olive oil. Excellent with any grilled or roasted meat or seafood, we love it on this simple winter tray bake of wild Pacific salmon, crisp broccolini, sweet parsnip, and delicata squash.
