Around the world there are endless iterations of skewered marinated meat cooked over a hot fire. In this version, from the Turkish words for, oddly enough, “stick” and “roasted meat,” cubes of tender beef are marinated in yogurt spiked with Turkish flavors like Aleppo pepper, cumin, and tomato, grilled along with bell peppers and onions and served wrapped in pita bread with a cooling, minty yogurt sauce.
