A complex braising base of smoky chipotle, tangy citrus, and aromatic spices gives this barbacoa layers of delicious flavors. Beef chuck roast is braised to melt- in-your-mouth tenderness, then shredded and served street taco style, stuffed into fresh corn tortillas and topped with cilantro, radishes, and diced onion, with bright lime wedges on the side for squeezing. Included are instructions for cooking on the stovetop, pressure cooker, and slow cooker.
