In this Northwest take on the Hawaiian staple, cubes of raw, sushi-grade wild Pacific salmon are tossed with a lightly sweet, gingery sesame + soy sauce, and served over seasoned sushi-style rice with quick-pickled sunomono cucumbers and steamed edamame.
