In Vietnamese cuisine, a sauce of deeply caramelized sugar is used as a simmering base for many dishes, but making caramel at home can be a real pain! In this streamlined weeknight version, ground pork is slowly sauteed along with shallots, garlic, and a savory-salty-sweet sauce that reduces to an irresistible caramelized crispness, served simply over steamed rice with cucumber, cherry tomato, cabbage, and limes for squeezing.
