Although to most it evokes memories of sodium-laden TV dinners, Salisbury steak actually traces its lineage back to the mid-19th century to a doctor of the same name who extolled the health value of a diet high in protein. Similar in composition if not shape to meatballs and meatloaf, a Salisbury steak is a seasoned ground beef patty, pan-seared then simmered in a rich mushroom + onion gravy, served with mashed potatoes and steamed broccolini on the side.
