The earthy, savory flavors of shiitake, oyster and dried porcini mushrooms are enrobed in a rich sauce of shallot, herbs, and cream and tossed with artisan campanelle pasta in this hearty celebration of fungus. To really bring out the best in the mushrooms, use a good dry sherry, but a dry white wine will work as well. Served with a light green salad on the side.
